We had the Chicken Scaloppini the other night. Not too impressed. The chicken part was great but had I known better I would have thrown an extra ladle of the lemon sauce in the bag. The pasta soaked up all the sauce immediately and it ended up pretty dry.
We'll be having the crunchy calzones tonight. That is a repeat favorite in our house now.
We made the Chicken Scaloppini last night.....I really messed up the sauce bad so I put butter, minced garlic & oregano on the pasta, asparagus, spinach mixture and it turned out really great that way. The tomatoes didn't fair to well in the freezer so I pitched them. All in all it was a good meal but I had to vary from the recipe. Probably won't get that one again. I figure 1 not so great meal out of the 35 we've made it's bad at all.  We're doing Teriyaki Pork Tenderloin tonight. Yummy!!!

Yeah I didn't freeze this one because I thought the spinach wouldn't hold up. I would definitely make some sauce. I think what Social Gourmet missed was the Cream part and not enough butter (I use margarine and fat-free cream for less cholesterol)
Lemon Butter Sauce: 3 tablespoons lemon juice 4 ounces white wine 4 ounces heavy cream 1 pound (4 sticks) butter Salt and freshly ground black pepper Chopped parsley leaves, for garnish
Heat the lemon juice and white wine in a saucepan over medium heat. Bring to a boil and reduce by one-third. Add cream and simmer until mixture thickens, about 3 to 4 minutes. Slowly add butter, about 2 tablespoons at a time, until completely incorporated, whisking constantly. Season with salt and pepper. Remove from heat and keep warm.

I called a little while ago and spoke to Lars. He said the dish I'm missing is still in their freezer and I could come pick it up anytime! Whew! I'm a happy girl - I thought we were going to miss out on those carnitas!

We did the Chicken Highbrow on Sunday and it was really good. But someone didn't like the asparagus. Do you think that maybe they would offer a subsistute for the asparagus? Green beans maybe?
I was thinking about this the other day, figuring out how to make it on my own - I think it would be really easy. As for a sub for asparagus, broccoli would do it, or green beans as a close second. I barely tasted the asparagus, but then if I didn't like the stuff I'd probably taste it more. Jenn

I tried to do the chicken cordon blue on my own and forgot part of it. And we finally did do the pizza rollups and they were really good. Cooking them on a stone is the best that way the bottom got really crunchy. Jenn, broccoli is a no no too for Roy. Some people are so difficult.

darn, I didn't even think of the stone, and I have one. We did the calzones on a cookie sheet and they where soggy on the bottom, but delicious. I'll use the stone next time.

Hey everyone, there's been some changes to our plans and Andria is coming home on the 20th now.  Her flight lands at 6:00 so we are going to do our meals on the 19th instead. Miss us, ok!
